La cucina di Simonaskitchen si prende una pausa di vacanza, torneremo a Settembre rilassati e con tante nuove idee.
Nel frattempo godetevi il sole, il caldo, il mare o la montagna, i temporali estivi e le giornate afose, per chi rimane in città, approfittate per guardare la vostra città con occhi diversi, son sicura che scoprirete qualcosa che ignoravate!
E per chi avesse voglia di uno stuzzichino da aperitivo con gli amici, ecco una ricetta veloce e profumata!

Ingredienti per circa 20 biscotti:
- 30 gr farina 00,
- 30 gr farina di grano saraceno,
- 50 gr Parmigiano Reggiano grattugiato,
- 40 gr burro,
- 6-7 foglie di basilico fresco,
- 1 presa di sale
Mescolare gli ingredienti secchi, poi aggiungere il burro a dadini e mescolare fino ad ottenere un impasto sabbioso.
Tritare le foglie di basilico ed aggiungerle all'impasto.
Formare un rotolino di diametro di 3 cm circa, coprire con pellicola e riporre in frigo per almeno 30 minuti.
Affettare poi dei tondi di spessore di circa 5 mm, disporli su carta forno ed infornare a 180°C per 15-20 minuti.

Ingredients for 20 cookies:
- 30 gr flour = 1/2 cup flour
- 30 gr buckwheat flour = 1/2 cup buckwheat flour
- 50 gr Parmigiano Reggiano (grated) = 1/3 cup grated Parmigiano Reggiano
- 40 gr butter = 1/4 cup butter
- 6-7 fresh basil leaves,
- 1 pinch of salt
Mix the 2 flours, add salt and grated cheese, then butter and knead well.
Cut fresh basil leaves into small slices and add the mixture.
Knead and shape a roll (3 cm diameter), cover with plastic and store into fridge for 30 minutes.
Then take plastic off and cut round slices, cook them at 180°C (356°F) for 15-20 minutes.
P.S.: this recipe can be turned into a 'gluten free version' using only buckwheat flour. I tried it and appreciated it, the taste of buckwheat is stronger but very good if combined to soft cheeses or veggies sauces.
