(ENGLISH VERSION'S FORWARD)
Massimo Mentasti è il giovane chef del
Ristorante La Gallina a Gavi, presso Villa Sparina Resort, dove ho trascorso un incantevole weekend che vi racconterò nei prossimi giorni!
Oggi vorrei invece illustrarvi la cooking lesson tenuta da Massimo e durante la quale ci ha illustrato dettagliatamente la ricetta di una focaccia con l'olio d'oliva, che chiamarla strepitosa è riduttivo.
La consistenza della focaccia infatti è sofficissima e molto saporita.
Gli ingredienti che ci ha dato Massimo sono conteggiati su 10 kg di farina, quindi è necessario riproporzionarli a 1 kg, io ve li riporto come dettati da lui e sono:
- 10 kg di farina,
- 6,4 l di acqua tiepida,
- 1 l di olio d'oliva,
- 400 gr di strutto,
- 300 gr di lievito di birra,
- 300 gr di sale
Gli ingredienti si lavorano tutti insieme nell'impastatrice per almeno 10 minuti.
L'impasto finale sarà morbido e molto appiccicoso, quindi richiede alcune accortezze.
Versare abbondante olio sul piano di lavoro e 'lavarsi' nel vero senso della parola, le mani ed i polsi con l'olio. Questo eviterà che l'impasto si appiccichi alle mani mentre lo si lavora.
Aiutandosi con una spatola, togliere l'impasto dall'impastatrice e adagiarlo sul piano di lavoro.
Versare altro olio e piegare l'impasto a libro, ripetere l'operazione diverse volte, aiutandosi con l'olio e la spatola.
Stendere l'impasto aiutandosi con le mani, lasciare lievitare altri 20 minuti circa coperto con pellicola.
Infine tagliare con la spatola delle strisce lunghe circa 30 cm e larghe 5-6 cm, ungere un teglione da forno ed adagiarvi le strisce.
La principale difficoltà di questa ricetta è la consistenza dell'impasto, come si può notare dalla foto, estremamente morbido.
Cuocere in forno a 500°C per 4 minuti. Ovviamente nei forni delle nostre cucine, dovremmo tarare la temperatura ed i tempi di cottura!

La Gallina Restaurant in Gavi, close to Villa Sparina Resort. I spent there a weekend at the end of August, and I'm going to tell you about it in the future days, while today I'd like to tell you about the interesting cooking lesson I had with Massimo.
It's s schiacciata with olive oil, very very soft and gorgeuos!
The dough was very very stichy, so you'll need some shrewdnesses.
Ingredients are considered on 10 kg of flour, so you have to reduce them for 1 kg. I write here as he told us.
- 10 kg flour,
- 6,4 l warm water,
- 1 l di olive oil,
- 400 gr lard,
- 300 gr brewer's yeast,
- 300 gr salt
Mix all ingredients together and using a mixer, melt well for 10 minutes. Final dough will be very soft and stichy.
Drop olive oil on the working layer and also on your hands, this will help you avoiding the dough to stich on fingers.
Take the dough out of the mixer and lay on the table, cover with oil and start folding it, adding olive oil.
Then stretch it with hands, let it rest for other 20 minutes, covering it.
Then cut 30 cm long stripes and lay them into a greased mould.
Cook into oven at 500°C for 4 minutes: of course normal ovens have differente temperatures, so we have to adapt cooking and times to normal ovens, and it'll take us more then 4 minutes cooking!
